Through engaging exhibits, videos, and hands-on experiences, the museum introduces a wide range of topics—from vinegar brewing traditions dating back to the Edo period, to the history of Mizkan, its relationship with nature, and its ties to the local community.
The museum is divided into five themed zones, featuring impressive displays such as enormous vinegar barrels measuring approximately two meters in diameter and a near full-scale reconstruction of a traditional benzaisen cargo ship. Immersive projection mapping and interactive presentations make learning enjoyable for both children and adults.

“Daichi no Kura” serves as the starting point of the Mizkan Museum experience. Following its 2024 renewal, it has been transformed into an even more immersive space.

Here, visitors can explore actual tools used in vinegar production while experiencing a recreated Edo-period vinegar brewery. You can even glimpse modern production processes, with interactive elements that may surprise you. In the fermentation room, you can observe traditional fermentation up close, deepening your understanding of the fascinating world of microorganisms—something rarely encountered in everyday life.

One of the highlights is the hands-on experience area, where you can learn about the wisdom and craftsmanship of vinegar artisans. Visitors can weigh sake lees, carry traditional barrels, and even smell the aroma of vinegar. In addition, interactive digital games allow you to take on the role of a vinegar maker through an avatar, making the learning process both fun and engaging.
The entire space is filled with the warmth of natural wood, beautifully expressing both the strength and gentleness of the earth.
This zone is packed with opportunities for both learning and hands-on experiences, making it enjoyable for children and adults alike, while inviting visitors into the world of Mizkan’s craftsmanship.
A Space of Light That Illuminates Ideas and the Future of Food

“Hikari no Niwa” was also renewed in 2024 and has become a space where visitors can reflect on the future of food and lifestyle at their own pace.
The most popular attraction in this area is the “My Ajipon” studio, where you can create your own original Ajipon label (for a fee). It makes a perfect souvenir or keepsake. Another engaging activity focuses on the concept of “future food,” where visitors use ingredients that might otherwise go to waste to create imaginative dishes by pounding, kneading, and decorating—offering a fun way to learn about social issues such as food loss.

Visitors can also exchange a coin received at the entrance for a vinegar drink tasting. Two types of vinegar drinks are available, and you can choose one to enjoy. Sipping a refreshing drink while gazing at the water-filled courtyard creates a peaceful moment, gently enveloped in natural light.
This experience goes beyond simple observation, offering a place for reflection, inspiration, and motivation toward future actions.
Experience Over 200 Years of Mizkan’s History Through Three Immersive Spaces

The “Wind Corridor,” “Time Warehouse,” and “Water Theater,” accessible only on the full-course tour, express Mizkan’s origins in Handa, its history, and gratitude for food that sustains life.
The “Wind Corridor” introduces Handa, a historic town known for its festival floats. Overlooking canals that retain the atmosphere of the Edo period, visitors can experience scenes of Handa and the lives of its people through nostalgic photographs and soundscapes from the Meiji to Showa eras.

In the “Time Warehouse,” visitors trace Mizkan’s 200-year history of innovation and challenge. A near life-sized reconstruction of a 20-meter-long Edo-period trading ship, the “Benzaisen,” allows visitors to experience a dynamic journey transporting vinegar from Handa to Edo through immersive visuals, sound, wind, and light.

Finally, the “Water Theater” conveys the importance of coexistence with nature and a food culture that supports life.
Each of these three zones offers a unique perspective while collectively expressing Mizkan’s philosophy and history through time, space, and sensory experiences.

Before concluding your visit, be sure to stop by the museum’s exclusive select shop.
Here, you will find a wide range of products, including limited-edition items, as well as the “ZENB” and “Fibee” series, all focused on deliciousness and health, alongside original museum goods.

Among the highlights is the pure sake lees vinegar “Mitsukan Yamabuki.” Originally developed by the founder, who was a sake brewer, this vinegar is made from leftover sake lees. Recreated from Edo-period recipes, it is known as “red vinegar” due to its deep amber color and rich, mellow flavor. The “Senya” version, aged for an additional three years in Handa, is available in limited quantities exclusively at the museum and makes an excellent gift.

The shop features a calm, wood-toned interior, creating a relaxing atmosphere where visitors can leisurely browse and select items. It’s the perfect place to reflect on your visit while choosing your favorite products.
More than just a souvenir shop, this space serves as an extension of the museum—an exhibition in its own right—where visitors can experience Mizkan’s philosophy and values, making it a fitting conclusion to the tour.
