Isshobin’s Commitment and History

At “Isshobin,” we are committed to providing our customers with the highest quality, safe, and delicious Matsusaka beef, which is generally reserved for top-tier sukiyaki and shabu-shabu, but here, it’s uniquely served as yakiniku. Our “A5” Matsusaka beef is known for its exquisite aroma that you can sense just by bringing it closer with chopsticks, and the burst of juicy flavors that melt in your mouth with each bite offers a special experience only found at Issho-bin.
Furthermore, we procure whole carcasses of “A5” Matsusaka beef through our unique channels, not just specific cuts, ensuring that we respect the individuality of Matsusaka beef. Our skilled craftsmen meticulously prepare the meat, allowing us to offer Matsusaka beef at a reasonable price that provides a sensory experience machines cannot replicate, bringing unforgettable experiences to as many people as possible.

Of course, to enhance the taste of this exceptional meat even further, we are particular about our sauces. Since our establishment in 1962, our secret miso sauce—a closely guarded recipe passed down through generations—balances a rich homemade flavor that supports rather than overpowers, perfectly enhancing the natural taste of the meat. Please enjoy it in combination with our beef.
Isshobin’s Commitment to the Highest Quality Matsusaka Beef

Matsusaka beef, one of the top three Wagyu brands in Japan and well-known nationwide from Mie Prefecture, is often referred to as an “artwork of meat.” Even the lean cuts are beautifully marbled, making the appearance as appealing as its taste. Beef is graded on two scales: yield and meat quality. Yield grades are divided into A, B, and C, with A being the highest, and quality grades range from 5 to 1, with 5 being the best. At Issho-bin, we proudly serve primarily A5 grade Matsusaka beef. Once it’s placed on the grill, the sweet and rich aroma known as “Wagyu fragrance” fills the air, whetting your appetite. The beef melts in your mouth, offering a sensation like no other.
Among the cuts of Matsusaka beef served at Isshobin, the chuck roll is tender and flavorful, finer and better marbled than sirloin, and offered as a special selection. The ribeye, known for its beautiful marbling and balance of lean and fat, is highly regarded for its flavor. The fine-grained, tender sirloin is superior in flavor and considered the best part of the loin cuts. The somewhat tougher shoulder clod features a moderate layer of fat and is served as a special selection to regular kalbi. The fillet, located under the sirloin, is characterized by its low fat content and fine texture, making it the most tender cut.
These five cuts are particularly popular at Isshobin. Additionally, the offal (small intestines) is exquisite, offering a fresh and tender texture that is also highly favored. It pairs wonderfully with our homemade miso sauce. All are exceptional, so we invite you to savor these delights.
Expanding from Mie Prefecture to Nagoya! Offering boxed lunches and takeout options!

Isshobin first opened its doors in Hirao-cho in 1962 and then established its main store in Matsusaka city in 1979. Back then, dining out wasn’t as common in Matsusaka, and gatherings typically involved home-cooked feasts. Over 60 years since its founding, Isshobin has continued to be cherished by locals and visitors alike.
Currently, Isshobin operates 11 stores in Mie and 3 in Aichi, including the main store and its annex. In addition to our usual fare of yakiniku and offal, we also offer boxed lunches and takeout services at several locations including the main store, Miyamachi store, Nagoya Lachic store, Suzuka store, Nagoya Noritake Shinmachi store, and Nagoya Nagoya Station store (Lachic store is takeout only; Nagoya Station store is boxed lunches only).
Our boxed lunches feature charcoal-grilled Matsusaka beef available in various cuts. You can choose from miso or soy sauce flavors, and they are grilled over charcoal upon order, ensuring freshly prepared delights. Our takeout options allow you to enjoy our signature Matsusaka beef and fresh offal at home just as you would in our restaurants.

Moreover, at our main store annex, we offer sukiyaki and shabu-shabu, while our Ise Naiku store provides sukiyaki. These two locations serve these options during lunchtime only. We also have facilities dedicated to large groups (30 or more) and a revolving yakiniku restaurant. Our Tsukamoto store features an all-you-can-eat plan, perfect for parties and gatherings, located within the premises of the Super Hotel Matsusaka, making it an excellent addition to any travel itinerary. The Miyamachi store and Nagoya Noritake Shinmachi store feature a revolving yakiniku lane, adding a unique twist similar to conveyor belt sushi.
Please check our official website for the specific hours and details of each location.
