Founded in 1923 as a wholesaler of flour and sugar, Miya Kishimen began its noodle-making business in 1935, and in 1970 opened its first restaurant under the current name. Over 100 years since the company’s founding, Miya Kishimen has served beloved local noodles for 57 years, becoming a signature Nagoya specialty.

The thick, flat noodles with a chewy texture are served in a flavorful broth made from four types of dried fish, including mackerel and bonito. This deeply satisfying combination has gained popularity not only among locals but also with visitors from all over Japan.

A Taste of History Born in the Forest of Atsuta

Kishimen is one of the most iconic dishes of Nagoya. Its roots trace back to the Edo period, when it became well known as a signature food of the region.

There are many theories about the origin of the word “kishimen,” but Miya Kishimen supports the theory that it evolved from the term “kigo men,” meaning “go board noodles,” because of the noodle’s flat, square shape.

The distinctive flatness of the noodles is thought to enhance the enjoyment of rich soy- and miso-based broths, which are commonly used in the Chubu region.

Miya Kishimen, based in Atsuta Shrine, was launched by Miyashoji Co., Ltd., founded in 1923. The company received the character “Miya” (meaning “shrine”) from the shrine’s head priest, giving the brand its name.

For semi-dried noodles, the “Shimadazukuri” method is used to achieve fluffy elasticity. Frozen noodles are cooked and then frozen to lock in the fresh-boiled taste.

The broths are also carefully prepared. Options include soy sauce, miso, and clear broth, plus a cold dipping sauce available during summer—each with bold Nagoya-style flavor.
