【Misen Yaba】Even on weekdays, there are always queues! Misen, the birthplace of Taiwanese ramen

Located between Sakae and Osu, Misen Yaba has a large fan base. The restaurant offers Taiwanese ramen as its standard menu item, which is characterized by its intense appearance and flavor. Its stimulating taste has a habit-forming quality that attracts repeat customers. The more you eat it, the more you become addicted to it.

Although it's called Taiwanese Ramen, its origin is not Taiwan but Nagoya, Japan. It all started when a Taiwanese restaurant owner, who was working at a Taiwanese restaurant called Misen in Nagoya, created the dish by offering an extremely spicy version of Tan-Tsu noodles, which was served on a small plate. It's interesting to note that there were similar noodle dishes in Taiwan, but no identical ramen existed.

What made it a popular and famous restaurant?

味仙

Although the restaurant was founded in 1962 and has been around for over 60 years, its popularity skyrocketed during the spicy food boom. Word of mouth about the slimming effects of spicy food and its perfect match for stamina recovery seems to have sparked the trend.

Because of the popularity of their spicy noodles, other restaurants jumped on the bandwagon, and in Nagoya, the formula “spicy ramen equals Taiwanese ramen!” became well-established. Even nationwide chain restaurants have added it to their menus in the Nagoya area. However, Misen is not just about spicy ramen. They also offer a wide variety of authentic Chinese cuisine, so it’s definitely worth a visit, even for those who are not fond of spicy dishes.

A rich taste that captivates not only Nagoya residents but also ramen lovers

台湾ラーメン

The most striking feature of Taiwanese ramen is, without a doubt, its powerful appearance! The punchy look alone is enough to make your mouth water, and you can’t help but get excited just by looking at it.

If you’ve never eaten it before, you might think it’s just spicy. But the umami flavor and deep taste hidden behind the spiciness are truly the work of a master craftsman! Minced pork, garlic chives, green onions, bean sprouts, and other ingredients are stir-fried and seasoned with chili pepper to make it spicy and then combined with a soy sauce-based soup. The resulting ramen is simple yet inimitable, created by the harmony between the boiled noodles and the soup.

As soon as you put it in your mouth, the intense spiciness hits you, and at first, you might cough and tear up. However, enduring the spiciness and sweating while eating is part of the enjoyment! The spiciness is divided into four levels, including a sufficiently spicy normal level, so it’s essential to choose according to your preferred intensity.

Another characteristic is the generous use of garlic, which explains why it became a big hit among Nagoya’s residents, who love rich flavors. The exquisite balance and lingering spiciness can become addictive, and as you get used to it, the stimulating spiciness becomes irresistible. While those not accustomed to spicy dishes may hesitate, it’s definitely worth trying this unique food culture rooted in Nagoya at least once.

The secret menu item that became a standard! An irresistible bowl with a delightful texture

ホルモンラーメン

Horumon (offal) ramen, which had been enjoyed as a “secret menu item,” has finally become a regular menu item.

Did you know about this change? It’s a hidden gem that many people don’t notice because it’s mentioned on a sign inside the restaurant but not on the menu. The same thin noodles are used as in the standard menu items, and the serving size is equivalent. It’s perfect for those who find the spicy Taiwanese ramen a bit too much, allowing them to enjoy the taste of Misen. It’s also great for those accompanying spicy food lovers.

The soup has a light, gentle flavor with a rich broth, but it’s still generously seasoned with garlic. The spiciness of the pepper becomes addictive. What’s more, the bowl is topped with an ample amount of large, tender offal pieces! Each piece is large and satisfying, but the melt-in-your-mouth smooth texture is irresistible. The sweetness of the fat gently scents the dish, making it easy to eat and appealing.

Although there are many Misen sister stores in Nagoya City, this dish is only available at the Misen Yaba! It’s a must try for those who come to eat spicy dishes. Additionally, since it’s rich in collagen, it’s recommended for women or those who want to boost their stamina and energy.

Don’t miss the delicious side dishes in the appetite-stimulating red-themed restaurant

This spacious restaurant, with round tables for different numbers of people, is always bustling and full of energy. The uniform red chairs and tables create an excellent atmosphere, further stimulating your appetite. Depending on the number of people in your party, you can also reserve private rooms, so feel free to inquire.

While many people order ramen as a standalone dish at the restaurant, the side dishes are not to be overlooked. The gas stove used in the restaurant is said to be custom made and produces ten times the heat of a regular stove. As the saying goes, high temperature is essential for Chinese cuisine! Don’t underestimate the classic stir-fried greens as just another common dish! Try some of the unique and delicious dishes that you won’t find elsewhere.

If you’re dining with a group, the popular course menu allows you to enjoy a little bit of everything! It starts with about four appetizers followed by main dishes, like sweet and sour pork and mapo tofu. Then, simple stir-fried dishes and soups are served. For the final dish, you can choose between Taiwanese ramen or fried rice and enjoy dessert as well. Please note that reservations are accepted by phone only.

Additionally, Taiwanese ramen, horumon ramen, and even crackers flavored like Taiwanese ramen are available for purchase online. When you find yourself craving that taste, you’re already hooked on Misen.
